Air fryer conversion from conventional oven recipes follows a consistent pattern: reduce the temperature and reduce the cooking time. Air fryers use rapid circulating hot air (convection) in a compact space, which cooks food faster and more efficiently than a standard oven.

General Conversion Rules: Air Fryer Temperature = Oven Temperature - 25°F (or -15°C) Air Fryer Time = Oven Time × 0.75 to 0.80 (reduce by 20-25%)

These rules work for most recipes, though some food types require additional adjustments.

Important Air Fryer Tips:

  • Do not overcrowd the basket. Air needs to circulate around all surfaces. Cook in batches if necessary. Overcrowding leads to uneven cooking and soggy results.
  • Shake or flip halfway. Most foods benefit from being flipped or the basket shaken at the midpoint for even browning.
  • Use a light spray of oil for the crispiest results, even on foods that already contain fat. A pump spray bottle works better than aerosol cans, which can damage the non-stick coating.
  • Preheat for 3–5 minutes before adding food. Some air fryers have a preheat function.
  • Check food early. The first time you make a recipe in the air fryer, check 5 minutes before the calculated time to avoid overcooking.

What Air Fryers Do Best: Frozen foods, French fries, chicken wings, roasted vegetables, reheating pizza, and anything you want crispy on the outside. They excel at replacing deep frying with far less oil.

What Air Fryers Struggle With: Wet batters (they drip through), very large items that do not fit, and delicate baked goods that need gentle, even heat from all sides.

Air Fryer vs. Convection Oven: An air fryer IS a small convection oven with a more powerful fan in a compact space. If your recipe was already written for convection, you may only need to reduce time by 10–15% rather than 20–25%, and may not need to lower the temperature at all.
