How Air Fryers Cook Air fryers use rapid hot air circulation (convection) to cook food from all sides simultaneously. This is far more efficient than a conventional oven, where heat radiates slowly from elements. The result: food cooks faster and at lower temperatures while achieving a crispy exterior.
Temperature Conversion Rule Reduce the oven temperature by 25°F (approximately 14°C) when cooking in an air fryer.
Air Fryer Temp (°F) = Oven Temp (°F) − 25 Air Fryer Temp (°C) = Oven Temp (°C) − 14
Time Conversion Rule Reduce cooking time by 20–25% compared to the oven recipe.
Air Fryer Time = Oven Time × 0.75 to 0.80
This calculator uses 0.78 (22% reduction) as a balanced default.
Preheating Most air fryers reach temperature in 2–3 minutes, compared to 10–15 minutes for an oven. If a recipe calls for preheating the oven, add 3–5 minutes to the total air fryer cooking time to account for this head start the oven recipe had.
Why Results Vary
- Basket size: smaller baskets mean more cramped food = less airflow = longer time
- Food thickness: thick cuts always need more time
- Frozen vs fresh: frozen food needs extra 3–5 minutes
- Flip halfway: always flip or shake for even cooking
