Butter to Oil Substitution Calculator

Oil Amount Needed

Butter and oil are not interchangeable at a 1:1 ratio. Butter contains approximately 80% fat, 16–17% water, and 3–4% milk solids. Oil is 100% fat. This difference in fat content means you need slightly less oil than butter to achieve the same richness and texture in a recipe.

The General Substitution Ratio

The standard conversion is: 1 cup of butter = ¾ cup of oil

This means you multiply the butter quantity by 0.75 (or three-quarters) to get the oil equivalent.

Why Less Oil Than Butter?

Since oil is pure fat and butter is only ~80% fat, the math works out to approximately 80% of the butter volume (roughly ¾). Using more oil than this can make baked goods greasy or overly dense, and can affect texture and rise.

Oil Type Matters

Different oils have different flavour profiles and smoke points, which affects how they perform in cooking and baking:

  • Neutral oils (vegetable, canola, sunflower, grapeseed): Best all-purpose substitutes with no flavour impact. Good for cakes, muffins, and sautéing.
  • Olive oil: Adds a mild savoury note. Works well in breads, savoury baked goods, and most cooking applications. Not ideal for sweet cakes or delicate pastries.
  • Coconut oil: Adds mild coconut flavour. Good for cookies, muffins, and tropical-themed recipes. Solidifies when cold like butter does.
  • Avocado oil: Very neutral, high smoke point. Excellent for high-heat cooking and neutral baking applications.

For Baking vs. Cooking

In baking, the fat ratio is critical for texture. Too much oil makes cookies spread thin and cakes greasy. Too little makes them dry. In cooking (sautéing, frying), the substitution is more forgiving — just use a bit less oil than butter.

Salted vs. Unsalted

Butter in recipes is usually unsalted. If you substitute oil, remember to add ¼ teaspoon of salt per ½ cup of butter replaced if the original recipe used salted butter.
