Recipe Scaler

Recipe scaling adjusts ingredient quantities up or down proportionally when you want to make more or fewer servings than a recipe originally calls for.

The core formula:

New Amount = Original Amount × (Desired Servings / Original Servings)

Scale Factor = Desired Servings / Original Servings

Apply the scale factor to every ingredient:

Scaled Ingredient = Original Ingredient × Scale Factor

What each variable means:

• Original Servings — the number of servings the recipe is written for
• Desired Servings — the number of servings you actually need
• Scale Factor — the multiplier applied to every ingredient amount (e.g., 0.5 = half the recipe, 3.0 = triple it)
• Original Amount — the quantity listed in the recipe for each ingredient

Worked example: A cookie recipe makes 24 cookies and calls for 2 cups flour, 1 cup sugar, 3 eggs, and ½ tsp salt. You want to make 60 cookies.

Scale factor = 60 / 24 = 2.5

• Flour: 2 × 2.5 = 5 cups
• Sugar: 1 × 2.5 = 2.5 cups
• Eggs: 3 × 2.5 = 7.5 eggs → use 7 or 8
• Salt: 0.5 × 2.5 = 1.25 tsp → use 1¼ tsp

Important scaling rules:

• Eggs are awkward — round to the nearest whole egg; the recipe will be fine with a ±0.5 egg difference
• Leavening agents (baking powder/soda) — scale proportionally up to 4× but use judgment beyond that; too much can make baked goods taste soapy
• Salt and strong spices — scale to 75–80% of calculated amount and taste; flavors can intensify non-linearly
• Pan sizes matter — doubling a recipe does not mean using a pan twice as big; baking times and temperatures may need adjustment
• Cooking time does not scale — a roast twice as large does not take twice as long; use a meat thermometer instead of time alone

Practical conversions:

• 1 cup = 16 tablespoons = 48 teaspoons = 240 ml
• 1 tablespoon = 3 teaspoons = 15 ml
• 1 pound = 454 grams
