Standard Waffle Batter Ratio (Classic)

The classic waffle batter recipe scales as follows per cup (240 ml) of batter:

  • Flour: 60 g (½ cup)
  • Baking powder: 2.5 g (½ tsp)
  • Sugar: 8 g (1.5 tsp)
  • Salt: 1.5 g (¼ tsp)
  • Egg: ½ egg (1 egg per 2 waffles)
  • Butter (melted): 28 g (2 tbsp)
  • Milk: 120 ml (½ cup)
  • Vanilla: ½ tsp (optional)

Belgian vs Classic Waffles

Belgian waffles use yeast or whipped egg whites to create a lighter, crispier, deeper-pocketed waffle. Classic waffles use baking powder for lift. Belgian waffles generally need a bit more batter per waffle due to the deeper grid.

The Secret to Crispy Waffles

  1. Do not overmix — lumps in batter are fine and prevent toughness
  2. Let batter rest 5 minutes before using to allow gluten to relax
  3. Make sure the iron is fully preheated before adding batter
  4. Don’t open the iron during the first 2 minutes — steam escaping too early causes sticking
  5. Adding a tablespoon of cornstarch to the dry ingredients significantly increases crispiness
