Quick Pickle Brine Formula
Quick pickles use vinegar (not fermentation) for preservation. Brine is typically a 1:1 ratio of vinegar to water with salt and sugar to taste.
Classic brine ratios by style:
| Style | Vinegar | Water | Salt | Sugar |
|---|---|---|---|---|
| Classic dill | 1 cup | 1 cup | 1 tbsp | 1 tsp |
| Sweet pickles | 1 cup | 1 cup | 1 tsp | 2 tbsp |
| Bread & butter | 1 cup | 1 cup | 1 tbsp | 3 tbsp |
| Asian style | 1 cup | 1 cup | 1 tsp | 4 tbsp |
Important: Use 5% acidity vinegar (standard white or apple cider vinegar). Always heat brine until salt and sugar fully dissolve before pouring over vegetables. Quick pickles must be refrigerated and used within 2–4 weeks.
