Oven temperature scales differ around the world — and even between oven types. Here is how they all relate to each other.

Fahrenheit ↔ Celsius: °C = (°F − 32) × 5/9

Gas Mark (UK/Ireland): Gas Mark is used on British and Irish gas ovens. Gas Mark 1 = approximately 275°F (140°C). Each mark increases by roughly 25°F (14°C).

Fan / Convection ovens: Fan ovens circulate hot air, making them more efficient. They typically run 20°C (about 35°F) hotter than conventional ovens. Always reduce the temperature by 20°C when using a fan/convection oven recipe in a conventional oven, or vice versa.
