Understanding Oven Temperature Systems
Recipes from around the world use three different systems to describe oven temperatures: Celsius (used in most countries), Fahrenheit (used in the United States), and gas mark (used primarily in the United Kingdom and some Commonwealth countries). Converting between them is essential when following international recipes.
Gas Mark System:
The gas mark system was introduced in 1943 by the British gas company Parkinson Cowan. Gas marks range from 1/4 (very cool) to 10 (very hot). Each gas mark increment represents a 25 degree Fahrenheit (approximately 14 degree Celsius) increase in temperature.
Conversion Formulas:
Fahrenheit = (Gas Mark × 25) + 250 (for gas marks 1 and above)
Celsius = (Fahrenheit - 32) × 5/9
Gas Mark = (Fahrenheit - 250) / 25 (for temperatures 275F and above)
For low gas marks (1/4 and 1/2), the formula is approximate. The exact values are:
- Gas Mark 1/4 = 225F = 107C
- Gas Mark 1/2 = 250F = 121C
Complete Gas Mark Conversion Table:
| Gas Mark | Fahrenheit | Celsius | Description |
|---|---|---|---|
| 1/4 | 225 | 107 | Very cool / very slow |
| 1/2 | 250 | 121 | Very cool / very slow |
| 1 | 275 | 135 | Cool / slow |
| 2 | 300 | 149 | Cool / slow |
| 3 | 325 | 163 | Moderately warm |
| 4 | 350 | 177 | Moderate |
| 5 | 375 | 191 | Moderately hot |
| 6 | 400 | 204 | Hot |
| 7 | 425 | 218 | Hot |
| 8 | 450 | 232 | Very hot |
| 9 | 475 | 246 | Very hot |
| 10 | 500 | 260 | Extremely hot |
Common Baking Temperatures:
| Food Item | Fahrenheit | Celsius | Gas Mark |
|---|---|---|---|
| Meringues | 225 | 107 | 1/4 |
| Slow roast | 275-300 | 135-149 | 1-2 |
| Cookies | 325-375 | 163-191 | 3-5 |
| Cakes | 325-350 | 163-177 | 3-4 |
| Bread | 350-425 | 177-218 | 4-7 |
| Pizza | 450-500 | 232-260 | 8-10 |
| Roast chicken | 375-425 | 191-218 | 5-7 |
Fan Oven Adjustment:
If using a fan-assisted (convection) oven, reduce the temperature by approximately 20C (or about 25F) compared to a conventional oven setting. Fan ovens circulate hot air, cooking food more evenly and efficiently. So a recipe calling for Gas Mark 6 (400F / 204C) in a conventional oven would need about 375F (190C) in a fan oven.
