Why You Cannot Swap 1:1 Honey, maple syrup, and agave are liquid sweeteners with around 17-20% water content, while granulated sugar is dry. Substituting without adjustments produces a wet, dense baked good. Honey is also about 25-30% sweeter than sugar, so you need less of it.
The Rules for Honey Use 3/4 cup honey for every 1 cup sugar. Reduce other liquids in the recipe by 1/4 cup for each cup of honey used. Add 1/4 teaspoon baking soda per cup of honey (honey is acidic — this neutralizes it and helps browning). Reduce oven temperature by 25°F to prevent over-browning.
Maple Syrup Use 3/4 cup maple syrup per 1 cup sugar. Reduce liquids by 3 tablespoons per cup. No baking soda adjustment needed (maple syrup is nearly pH neutral).
Agave Nectar Use 2/3 cup agave per 1 cup sugar. Reduce liquids by 1/4 cup. Add a pinch of baking soda. Reduce oven temp by 25°F.
