Scale Factor

Scaling a Recipe To scale a recipe, multiply every ingredient quantity by the scale factor: Scale factor = Desired servings / Original servings. A recipe for 12 cookies scaled to 36 cookies has a factor of 3 — triple every ingredient.

What Scales Linearly Most ingredients: flour, sugar, butter, eggs, chocolate, fruits, vegetables, liquids. Temperature stays the same — ovens do not need to be hotter for larger batches.

What Does NOT Scale Linearly Leavening agents (baking powder, baking soda): scale conservatively. For a 3x batch, use 2x the leavening, not 3x — excess leavening causes bitterness and collapse. Salt: scale at 75% of the multiplier for large batches, as our perception of saltiness is nonlinear. Pan size: larger volume batches need larger pans or more pans — do not just use a deeper pan.

Baking Time Baking time does NOT scale. A larger batch in more pans bakes in the same time. A larger single pan may need slightly longer baking. Use a thermometer or toothpick test — do not rely on time alone.
