Roasted coffee follows a freshness curve: an early degas phase (CO2 still escaping), a peak window (best flavor), and gradual decay.

Standard freshness timeline (whole bean, sealed bag with valve):

Ground coffee decays MUCH faster:

  • Whole bean shelf life: ~30 days at peak
  • Ground coffee shelf life: 3-7 days at peak
  • Surface area exposure to oxygen is the killer
  • Industry rule: never grind more than you’ll use within an hour

Light/medium vs dark roasts:

  • Light roasts: longer degas (5-10 days), narrower peak (10-14 days), fast decay
  • Medium roasts: standard 4-7 day degas, 14-21 day peak
  • Dark roasts: short degas (2-4 days), wider peak (10-30 days), slower decay due to oils sealing surface

Espresso vs filter:

  • Espresso wants slightly older beans (10-25 days post-roast) for thicker crema and balanced extraction
  • Filter coffee shines fresher (7-21 days) for full aromatic complexity

Signs your beans are stale:

  • Weak bloom (less than 1.5× volume increase)
  • Flat, papery taste in cup
  • No oily sheen on dark roasts
  • Loose surface oils (rancid notes)

Pro tip — freezer storage works: Vacuum sealing whole beans and freezing right after roast keeps them peak-fresh for 6+ months. Pull from freezer 30 minutes before brewing — never grind frozen beans.
