How much cheese to buy depends almost entirely on the occasion — cheese as a standalone snack behaves very differently than cheese as one element of a full meal.
Standard serving sizes by occasion:
Appetizer course (cheese among other nibbles): 1–1.5 oz (28–43g) per person Dinner accompaniment or side: 1.5–2 oz (43–57g) per person Charcuterie or grazing board (cheese is the main event): 3–4 oz (85–113g) per person Cheese course at a dinner party: 2–3 oz (57–85g) per person
These estimates assume a mix of cheeses. If offering a single variety, plan on the higher end of each range — there is nothing to alternate with.
Block sizes to plan for:
- Mini wedge: 4 oz (113g)
- Standard block/wedge: 7–8 oz (200–227g)
- Half pound: 8 oz (227g)
- One pound: 16 oz (454g)
- Two pound block: 32 oz (907g)
Variety matters on a board. Three to four cheeses of contrasting types (soft/hard, mild/sharp, aged/fresh) serve more people satisfyingly than the same total weight of one cheese. A classic trio: a soft creamy cheese (brie or camembert), a semi-firm medium cheese (gouda or havarti), and an aged sharp cheese (cheddar, gruyère, or manchego).
Cheese is best served at room temperature — remove from refrigeration 30–60 minutes before serving. Cold cheese has muted flavor and a rubbery texture.
