Oil Amount Needed

Knowing the right amount of cooking oil prevents waste, ensures proper cooking, and helps manage fat intake. Too little oil causes sticking and uneven cooking; too much wastes oil and adds unnecessary calories.

Oil amounts by cooking method:

Pan Frying / Sauteing: Just enough to slick the base, about half a millimeter once it spreads. That is a tablespoon or two in a normal pan, which is what it should be.

  • Volume = Pan area × 0.5 mm depth

Shallow Frying: Oil should come halfway up the food, about 1–2 cm (0.4–0.8 inches) deep.

  • Volume = Pan area × 15 mm depth

Deep Frying: Food must be fully submerged, so at least 5–8 cm (2–3 inches) of oil.

  • Volume = Pot area × 65 mm depth
  • Never fill a pot more than halfway with oil. Food bubbles violently when it goes in.

Look at the gap between those columns before you commit to anything. Shallow frying a 25 cm pan takes exactly thirty times the oil of sauteing in it, and deep frying takes a hundred and thirty times. The jump from “a bit of oil in a pan” to “a pot of oil” is far larger than it feels while you are standing at the stove, and it is most of the reason home cooks quietly give up on deep frying.

Practical example: Deep frying in a 25 cm (10 inch) pot at the 6.5 cm depth this calculator uses takes about 3.2 liters (0.84 gallons) of oil. Go to 7 cm and it is 3.4 liters. That is a lot of oil to buy, heat, and then deal with afterwards, which is the honest reason most home cooks shallow fry instead.

Canola surprises people by sitting near the bottom of that list. It is the default frying oil in most kitchens, and at 204°C it still clears everything on this page, but it has less headroom than its reputation suggests.

Treat all of these as approximate. Smoke point drops as an oil ages, and it drops fast once the oil has been used: a batch that smoked at 232°C when new may start smoking around 200°C after three sessions of frying. Refining matters more than the plant does, which is why refined coconut sits about 55 degrees above virgin coconut at 177°C, and why light olive oil beats extra virgin by 50.

Tips:

  • Use oils with high smoke points for frying.
  • Strained and stored properly, deep-frying oil gives you somewhere between 3 and 8 batches. Plain potatoes sit at the top of that range; batter, breadcrumbs and fish drag it down to two or three.
  • 1 tablespoon of oil contains about 120 calories regardless of the type.
