Oil Needed

Deep fryer oil amount depends on the fryer size and type. Most fryers need to be filled to the fill line, typically 60–80% of total capacity.

General rule: Oil needed = Fryer capacity × 0.70 (70% fill)

Common fryer sizes:

Volume conversions:

  • 1 liter = 0.264 gallons = 1.057 quarts
  • 1 gallon = 3.785 liters

Oil smoke points:

  • Peanut oil: 450°F (232°C) — best for deep frying
  • Canola oil: 400°F (204°C) — good all-purpose
  • Vegetable oil: 400°F (204°C) — budget-friendly
  • Sunflower oil: 440°F (227°C) — neutral flavor
  • Avocado oil: 520°F (271°C) — premium choice

Oil reuse tips:

  • Strain through cheesecloth after each use
  • Store in cool, dark place
  • Reuse 3–4 times for most oils
  • Discard when oil darkens, smells off, or foams excessively
