Pan Volume

Baking pan sizes are measured in inches in the US and centimeters in most other countries. When substituting pans in recipes, matching the volume (not just the diameter) ensures correct baking results.

Diameter conversion:

  • Inches to cm: cm = inches x 2.54
  • cm to inches: inches = cm / 2.54

Pan volume formulas:

  • Round pan: Volume = pi x (diameter/2)^2 x height
  • Square pan: Volume = side x side x height
  • Rectangular pan: Volume = length x width x height

Substitution rules of thumb:

  • An 8-inch round pan holds roughly the same volume as a 7-inch square pan.
  • A 9-inch round pan holds roughly the same volume as an 8-inch square pan.
  • When doubling a recipe, go up about 2 inches in diameter for a round pan (e.g., 8-inch to 12-inch), not just doubling the pan size.

Practical baking tips:

  • Fill pans only 1/2 to 2/3 full to allow room for batter to rise.
  • If using a larger pan than the recipe calls for, reduce baking time by about 15-20% since the batter will be shallower.
  • If using a smaller pan, increase baking time slightly and watch for overflow.
  • Dark-colored pans absorb more heat, so reduce oven temperature by 25F (15C) to prevent over-browning.
