The core formulas:
Tips per Shift = Total Table Sales × Average Tip Percentage
Weekly Tip Income = Tips per Shift × Shifts per Week
Annual Tip Income = Weekly Tip Income × 52
Effective Hourly Rate = (Hourly Wage + (Tips per Shift / Shift Hours))
What each variable means:
- Total Table Sales — the total dollar amount of food and drinks served across all tables in a shift
- Average Tip Percentage — US dining average is 18–20%; fine dining averages 20–22%
- Hourly Wage — tipped minimum wage (varies by state; as low as $2.13/hour federally in the US)
- Effective Hourly Rate — the true all-in hourly rate combining wages and tips
Worked example: A server works 5 shifts per week. Average table sales per shift: $900. Average tip rate: 19%.
Tips per shift = $900 × 0.19 = $171 Weekly tips = $171 × 5 = $855 Annual tips = $855 × 52 = $44,460/year in tips alone
With a $3.00/hour wage on 6-hour shifts: Hourly wage income = $3 × 6 = $18/shift Effective hourly rate = ($18 + $171) / 6 = $31.50/hour
