Gelatin Setting Ratios

Standard gelatin setting ratios (powdered gelatin):

Firmness Gelatin per 500ml Use case
Soft / Panna Cotta 4–5g Delicate, barely holds shape
Medium / Jelly 7–8g Classic jello texture
Firm / Sliceable 10–12g Terrine, molded desserts
Gummy / Chewy 15–20g Gummy bears, firm candy

Sheet gelatin conversion: 1 sheet (2g) ≈ 1 tsp powdered gelatin

Bloom the gelatin in cold water for 5 minutes before dissolving in warm liquid. Never boil gelatin — it destroys the setting ability.
