How Mocktail Ratios Are Calculated

Great mocktails follow the same balance principles as cocktails: a base (juice/tea), acid (citrus), sweetener (syrup/honey), and modifier (sparkling water, bitters). Getting the ratio right creates a drink that’s complex, not flat.

Standard Mocktail Ratio: Base : Acid : Sweetener = 4 : 1.5 : 1

For a single serving (150ml total before ice dilution):

  • Base: ~80 ml
  • Acid (citrus juice): ~30 ml
  • Sweetener (simple syrup): ~20 ml
  • Sparkling water top-up: 60–100 ml

Worked Example — Sparkling Elderflower Lemonade (serves 1):

  • Base: 80 ml white grape juice
  • Acid: 30 ml fresh lemon juice
  • Sweetener: 20 ml elderflower cordial
  • Top with sparkling water to ~200 ml total

Simple Syrup Ratio: 1:1 syrup = 1 cup sugar dissolved in 1 cup warm water 2:1 rich syrup = 2 cups sugar : 1 cup water

Rich syrup is sweeter, so use half the volume.

Flavor Balance Guide:

  • Too tart: add 5ml more sweetener
  • Too sweet: add 5ml more citrus
  • Flat: more acid or carbonation
  • One-dimensional: add a drop of aromatic bitters (alcohol-free varieties exist)
  • Weak body: muddle fresh herbs (mint, basil, rosemary), or add a splash of cold brew tea

Batch Scaling: Multiply all quantities by number of servings. Omit sparkling water from batch — add per glass at service to preserve fizz.
