Note: Flour weight varies by how it is measured. Scooping directly from the bag compacts flour and gives more weight. Spooning into the cup and leveling is the standard method.
Flour is the ingredient where cup measuring does the most damage, because flour compresses. Dip the cup straight into the bag and you pack in extra, easily 20 to 30 percent more than the spooned-and-leveled method these numbers assume. In a cake or loaf, that gap is the line between tender and dense, which is why serious bakers weigh their flour and why a recipe that lists grams is doing you a favor.
The flour type matters too, and not only for weight. Bread flour has more protein for gluten and chew, cake flour has less for a soft crumb, and almond flour has no gluten at all and behaves nothing like wheat. Swapping one for another by volume changes both the weight and the result, so a substitution usually needs more thought than a one-to-one cup swap.
